Sleep Walk Criollo Blanco Bar

Criollo Blanco
We sourced this cacao from our friends at Finca San Jeronimo Miramar in Guatemala, roasted it in Chicago, and tempered and molded these bars by hand. These beans are referred to as almendra blanca, or "white almonds," referring to the color of the bean before it has been fermented. The beans and pulp are removed from the pods and fermented for days in wooden boxes to produce more complexity in the finished bar. These dark chocolate bars are 70% dark chocolate, and that lighter more milk chocolate color comes from the lighter color of this variety's beans. This chocolate won a silver medal in both the 2024 International Chocolate Awards World competition and the 2024 International Chocolate Awards Americas competition!
